INGREDIENTS

  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  •  
  • 1 pound New York strip steaks, cut 3/4 inch thick
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1/4 cup minced shallot
  • 2 tablespoons butter
  • 2 tablespoons red wine
  • 1 tablespoon vegetable oil
  • salt and pepper to taste

DIRECTIONS

  1. In a small bowl, mix together the paprika, salt, pepper, garlic powder, onion powder and thyme. Sprinkle onto each side of the steaks, pressing in so it adheres. Set aside.
  2. Melt the butter in a skillet over medium-high heat. Add the shallots; cook and stir for about 1 minute. Add the mushrooms, and cook for a few more minutes, until tender. Stir in the red wine, and cook until most of the liquid has evaporated. Remove from the heat and keep warm.
  3. Heat the oil in a separate skillet over medium-high heat. Fry steaks for 5 to 7 minutes per side, or to your desired degree of doneness. Remove to a plate and let rest for a few minutes. Top with mushrooms and serve.

I've made this recipe 3 times in the last month. My daughter liked it so much, so requested this for her birthday dinner. The red wine adds a lot of flavor to the mushrooms. I found I like a mixture of different mushrooms. The last time I prepared the "rub", I tripled the recipe and placed the extra in a small glass jar so I can prepare again quickly.

Really liked the flavor of the thyme in this one. I used one pound of sliced button mushrooms and put in some frozen diced onion instead of shallots. Didn't measure the wine. Reduced down a bit.

Fairly quick and easy, with nice results. Also good because I usually have all the ingredients on hand. I used t-bone steak because I needed to get rid of it. I put the mushroom sauce back in the pan with the meat to simmer a few minutes to hopefully soften the meat a little. I put the meat and sauce over mashed garlic potatoes to soak up the sauce. I was pleased with the results and will use the recipe again.
